Red Beans

Recipe in the January Issue of the Texas Informer


  2 lb. dried red beans
  1 lb. smoked sausage
  3 Tsp. vegetable oil
  1 lb. salt pork (cut into pieces)
  1 medium onion, chopped
  2 small carrots, chopped
  2 medium celery stalks, chopped
  2 Tsp. vinegar
  1 tsp. salt
  1/2 tsp. pepper
  2 cups rice


Sort red beans and wash. Place in soak in large pan or bowl, cover well with water. Let beans soak 2 to 3 hours. Brown sausage in small amount of vegetable oil remove and drain. Drain beans. Cover with water and ad all ingredients. Cover and simmer two to three hours. Serve over hot cooked rice.

Easy Butter Pound

Recipe in the February Issue of the Texas Informer


1 pound butter
1 (16-ounce) box powdered sugar
6 whole eggs
1 teaspoon of vanilla, lemon, or brandy
2 cups all-purpose flour shortening,

   for greasing tube cake pan




Prepare all ingredients at room temperature.  Cream butter at medium speed for about 5 minutes or until shiny. Add the sugar gradually and mix well. Add eggs, one at a time, beating well after each addition; add vanilla, lemon, or brandy. Add flour at low speed and mix until smooth. Grease a tube cake pan with shortening and dust with flour. Bake at 350 degrees F for 1 hour and 15 minutes. After 50 minutes, check at 10 minute intervals until done (when it either cracks on the top or is slightly browned). Cool at least 10 minutes before removing from pan. The cake may be dusted with powdered sugar.
